Neapolitan ricotta cheesecake
Ingredients for short pastry
- 1 kg flour "00"
- 600 g butter
- Orange skin
- 400 g powdered sugar
- 200 g egg yolks
Ingredienti for the filling
- 500 g boiled corn
- 500 g sheep ricotta cheese
- 400 g sugar
- 100 g candied orange peel
- 1 vanilla
- 1 Neroli
- 1 pinch of cinnamon
- 100 g custard
Mix butter and flour and follow the rest.
Add the boiled corn, the already sifted ricotta cheese mixed with sugar, add the cut-into-cubes candied orange peel, vanilla, orange blossom water, a pinch of cinnamon and custard.
If the mixture is too thick add a few milk drops.
Transfer the pastry to a pie pan; gently press the pastry to the bottom and sides of the pie pan, fill with the mixture and level, folding inwards the edges and garnish with pastry strips as a grid. Bake at 165 ° -170 ° C for 45-50 minutes.
